What is caryophyllene?

β-caryophyllene is a sesquiterpene (15 carbons, vs the 10 in monoterpenes like myrcene and limonene) found in black pepper, cloves, cinnamon, and rosemary. Its peppery, woody aroma is why caryophyllene-dominant cannabis often smells "spicy" or "herbal-pepper" rather than fruit-citrus. In cannabis, caryophyllene typically tests at 0.2–1.5% of total flower mass.
